# How to Make It:
- Whisk all-purpose flour, almond flour, sugar, and salt in a large bowl. Incorporate cold butter using a pastry cutter until mixture resembles coarse crumbs.
- Whisk egg yolk with 3 tablespoons ice water. Drizzle into flour mixture and stir until dough just forms, adding more water if necessary. Shape into disk, wrap, and refrigerate for at least 30 minutes.
- Preheat oven to 400°F. Line baking sheet with parchment. Toss plum slices with honey, sugar, cornstarch, vanilla, cinnamon, and salt.
- Roll dough on lightly floured surface into 12-inch circle. Transfer to prepared baking sheet.
- Arrange plum mixture in center, leaving 2-inch border. Fold edges over fruit, pleating as needed.
- Brush crust with beaten egg and sprinkle with turbinado sugar.
- Bake 35 to 40 minutes until crust is golden and fruit is bubbly.
- Drizzle warm galette with extra honey and scatter with clover blossoms if desired. Cool briefly before slicing.
